We finally caught colds, and although I'm annoyed, I should be thankful that these were our first for the winter:) A sick toddler is no match for a sick baby, how quickly I forget. We spent a couple of nights holding Joshua upright so he could sleep, which meant that mommy didn't so much sleep AND mommy got sick too...awesome.
Needless to say, our dinners this week were survival mode:
Sunday: tomato Soup frozen from a few weeks ago
still oh so yummy
Monday: french toast stacks
french toast from ciabatta bread layered with strawberries and whipped cream...some call it dessert, I call it dinner.
Tuesday: Friends house for dinner, fellowship and no cooking...double score
Wednesday: Burritos
Frozen chicken and black beans plus fresh rice = easy dinner for me.
For the first time I cooked my own tortillas from an epicurious recipe and they were a. good and b. really easy...things I learned: first, they are best small, much to the dismay of my husband who was hoping for giant sized ones that he could fill to the brim. second, since I only use whole wheat flour, it required much more vegetable oil (I used a combo of bacon drippings, butter and oil, as suggested by a reviewer)..a couple tablespoons in fact. And they do reheat well, with a generous sprinkling of water.
Thursday: when I'm sick, my husband can con me into pizza
Friday: grilled ham and cheese...plus soup for mom and dad (chicken and rice, frozen, from a previous week...have I mentioned how much I love my freezer)
Ham is such an underrated yet amazing addition to grilled cheese, don't you think:)
Saturday: leftovers, and since I still can't taste anything because my nose is clogged (TMI, sorry) I don't even remember what I had.
hoping that the return to winter will get our immune systems back in check before spring really hits and my boys have unreasonably yucky seasonal allergies.
